Dehydrated foods are tasty, nutritious staples that keep for extended periods, in the pantry or the freezer. Low temperature dehydrating preserves nutrients and enzymes, and protects delicate flavours.

The tastes and textures of dehydrated foods range from soft to crunchy and sweet to savoury. With the use of ingredients such as nuts, seeds, flax, buckwheat, legumes and other vegetables, and herbs and spices, both nutrition and digestibility are at the forefront of this workshop.

All recipes are vegan, wheat-free, dairy-free, soy-free and sugar-free. Ingredients are organic as available.

Participants are treated to a light lunch and taste samples of many of the dehydrated foods sited above, receive a Course Booklet with information, guidelines and recipes.

A note from Erika: For those living in the County, I use an Excalibur dehydrator; the machine is available at Zest Kitchen Store, on Main Street in Picton ON
